I have been going strong on my new year’s workout resolution. But a week ago I was thinking, I’ve been working out for quite a while now, yet I’m not seeing much definition in my muscles yet. I know it takes some time to see results, but I kept wondering if maybe I was doing too much cardio, or not eating enough protein…..
Regardless of whether or not I should be showing results yet or not, I know that I am not eating as much protein as I should. The majority of my diet consisted of carbs from grains. I knew I probably should make a change to the way I eat, and although I have been counting and meeting my daily intake goals, I haven’t done it the best way possible.
In other words, I haven’t been eating as much fruits and veggies as I should be.
I keep getting emails about the paleo diet being good for athletes and runner’s, so I decided to look into it a little more. Nerd Fitness had a great article about paleo here.
So, I have decided to do a 30 day paleo challenge, to see how my body responds to it, and in attempt to get myself into the habit of eating more protein, fruits and vegetables.
So far, I have enjoyed it. For breakfast, I would usually grab a bagel and eat it in my car on the way to work, or pick up a protein bar at the gas station on the way. Since those are no longer options, I have been getting up a little earlier and actually cooking myself breakfast. It’s nice to actually sit down and eat breakfast instead of doing the grab-and-go. I’ve been making omelettes mostly, but I also found a good recipe for oatless oatmeal here.
I’ve been taking salads for lunch, and apples or bananas or carrots or almonds for snacks. My first dinner was a beef stir fry with mashed cauliflower (which was delicious!). I’ve got some great recipes to try this weekend that I am excited about.
Eating more fruits and veggies is definitely affecting me, and I’m actually finding it harder to reach my calorie intake goal than not to go over, like before, because they fill me up much more than the normal pretzels and popcorn and baked potato chips that I would eat before.
So far so good!
