It’s good to be home!
My husband and I traveled to Florida this past weekend to spend time with family. My parents threw a party at their home to celebrate our wedding with the relatives that weren’t able to attend the ceremony in Texas, and so that my husband can finally meet my mother’s side of the family. My mom’s family is fairly large, and I am not sure exactly how…but I know we are all related somehow. A lot of 2nd, 3rd and 4th cousins and whatnot. It was great to see them all again.
But, while I love seeing my family, like I said in my last entry, I am an introvert. I get a little overwhelmed when I am around so many people at once. After a while I get a desire to wander off somewhere where I can be alone again. I had a difficult time in basic since you are never allowed to be on your own. I start to feel a little anxious, and claustrophobic in a way. This article from the Huffington Post explains the physical differences of introverts pretty spot on for me.
We had a great time in Florida despite the rain on Friday, but it was good to get back home to Texas and see our kitties. They missed us and we missed them. For almost two hours I had a happy, sleeping cat on my lap when we got home. Wallowitz is now finished with his meds and back to his normal self. It’s great to have him healthy again.
Anyway, on to this recipe, which I have had for a while now and kept forgetting to post. I love making my own salad dressing. It’s so simple, and can add a great flavor to your salads (or whatever you decide to put it in). This Sweet Strawberry Dressing is one of my favorite homemade salad dressings, and adds some sweetness to your salad. It pairs nicely with chicken. I like to put this on a salad with spinach, chicken, pecans, and red onions. It has a good amount of tart sweetness to add a delicious flavor to any salad!
Making your own homemade paleo salad dressing is as easy as placing ingredients in a blender and blending it. And now you have a salad dressing without a bunch of added sugar and other unknown ingredients! I love this Sweet Strawberry Dressing, it’s bright, colorful and filled with healthy fruits and fats!

- 1 cup strawberries stems removed and halved
- 1/2 lemon juiced
- 2 Tbsp honey
- 1/2 cup avocado oil
- 1/4 cup balsamic vinegar
Place all ingredients into a blender and blend well. Use and enjoy!
