Three Meat and Sweet Potato Breakfast Casserole

 

This Paleo three meat and sweet potato breakfast casserole combines all of the tasty breakfast meats with the sweetness of sweet potatoes for a tasty meal!

This is a hit among my family and co-workers. This is one of my boyfriend and I’s favorite things to eat for breakfast…or any meal! Especially after a workout, since it’s loaded with protein! In the past, I had just made it as a scramble for us, but it occurred to us this past weekend that I could probably double the recipe and turn it into a large casserole. That way, it’s easily available in the fridge to just heat and serve, since it can take a little bit of time to make.  It turned out great, so I doubled the recipe and made it in a 9 x 13 casserole dish. And here it is!

 

I have made this for my family, my co-workers, and my boyfriend’s family, and they all enjoyed it.  My dad and brother were hesitant at first about sweet potatoes in a breakfast meal, but they both loved it! This three meat and sweet potato breakfast casserole is so bomb!

Three-Meat and Sweet Potato Breakfast Casserole
Servings: 4 -8
Ingredients
  • 1 medium Sweet Potato
  • 6 slices of Bacon
  • 1/2 pound Sausage
  • 4 slice of Ham
  • 6 Eggs
  • 1/2 tsp Seal Salt
  • 1/2 tsp Ground Black Pepper
  • 1/2 tsp Red Pepper Flakes opt
Instructions
  1. Pre-heat oven to 425 degrees.
  2. Peel and dice up your sweet potato and very lightly toss in oil. Spread the potatoes out on a baking sheet and bake in the oven for about 30 minutes. When they are finished, lower the oven to 350 degrees.
  3. While the sweet potato is baking, Slice up the bacon, and cook in a skillet until done. Place on a plate with paper towels to drain. Pour out the grease.
  4. Next, cook your sausage in the pan until it is cooked through, and place on a plate with paper towels to drain.
  5. Dice up your ham slices. I also like to brown them in the pan a bit, but it's not necessary.
Assembly:
  1. Place the sweet potatoes in an 8x8 casserole dish and spread evenly on the bottom of the dish.
  2. Next, spread the ham slices evenly on top of the sweet potatoes.
  3. Next, add the sausage.
  4. Sprinkle bacon evenly over top.
  5. Crack you eggs into a bowl and add the salt, pepper and red-pepper flakes. Whisk until the eggs are all beaten. Then, slowly pour over the top of the casserole, making sure to distribute the eggs evenly.
  6. Place the casserole into the oven and bake for 30-35 minutes, until eggs are cooked through. Let the casserole cool for at least five minutes before slicing.

I have also made this with butternut squash in place of the sweet potato, and it is good as well!
