It’s hump day! We are halfway through the week, how is your week going?

Did anyone watch the MLB draft on Monday?  I normally don’t watch these things, I have never before watched a draft in my life or had any interest in the draft.  But I had extra interest in it this year, because my cousin Nate Pearson was in it.  I was excited to watch and see where he ended up.  It was really interesting to watch and I was holding my breath for each announcement.  He ended up being the 28th pick in the first round with the Toronto Blue Jays!  My family had a big draft party at my aunt’s house in Florida, and I was able to watch all of the videos they posted of the whole place going wild at the announcement.  It was such a great moment to watch, and I wish I could have been there, but I am super proud of my cousin and excited for his future.  I am now a Blue Jays fan! I don’t really eat many salads because I cook a lot of things like meat and potatoes and veggies and casseroles for us, but I do love making and eating salads. Especially because you can really be creative with them.

Antioxidant Chicken and Blueberry Salad with Sweet Strawberry Dressing

I realized last week that I hadn’t used my Sweet Strawberry Dressing in a while, which is really kind of sad because it is one of my favorite homemade dressings.  And it’s so easy!

It occurred to me that I should start following this trend of salads in a jar. Have you seen this trend? It’s pretty amazing.

The idea is to start with the wet ingredients on the bottom and put the dry on top.  So the dressing would go in first, then the protein, fruits, crunch, veggies, then the lettuce.  That way, when you’re ready to eat it, you turn it upside down and dump the salad onto a plate or in a bowl, and your lettuce is still fresh and crispy and you don’t end up with a soggy salad.  How genius is that?

Salad in a jar has really made life easier.  Meal prep is simple with these, and it makes it easier to eat healthy.  I usually use quart Mason jars to prep these.  Then I have a few days of healthy lunches ready to dump and eat in my fridge!

I love this Antioxidant Chicken Salad with Sweet Strawberry Dressing.  The paleo homemade dressing pairs well with the chicken and blueberries, and you have a good amount of antioxidants from the strawberries, blueberries, greens and almonds.  I took a jar to work with me and had a tasty, healthy lunch.

This Antioxidant Chicken Salad with Sweet Strawberry Dressing is a healthy, delectable salad that can easily be prepared in a jar for easy meal-prep!

Course: Salad
Servings: 2 jars
Ingredients
  • sweet strawberry dressing
  • 8 oz chicken breast butterflied and halved
  • 1 Tbsp olive oil
  • 1 cup blueberries
  • 1/2 cup sliced almonds
  • 4 green onions sliced
  • 2 cups lettuce or spinach
Instructions
  1. Cook the chicken.  Heat oil in a skillet over medium high heat.  Sprinkle both sides of chicken with salt and pepper.  Cook chicken in the skillet for 5-7 minutes on each side, or until it is cooked through and there is no pink.  Remove from pan and slice.

  2. Divide the greens on two plates, and top each with the chicken, blueberries, almonds, green onions, and desired amount of dressing.

For Jar Assembly:
  1. Start by placing 1-4 Tbsp of the dressing in the bottom of the jars.

  2. Place the cooked chicken in next.

  3. Layer in the blueberries.

  4. Add the almonds to the jars.

  5. Layer the green onions in the jars next.

  6. Add the greens to the jars.  Pack as little or as much as you want in the jars, then seal them up and refrigerate.

  7. When you are ready to eat the salad, unscrew the jar, hold upside down over a plate or a bowl, and use a fork to help empty all of the salad ingredients onto your dish.  Your lettuce should be nice and crispy.  Eat and enjoy!
