I love these cookies. I want to eat them every day this fall, they taste perfect for autumn. Once I perfected the recipe I couldn’t wait to share it with you all. These have a good old-fashioned apple spice taste and are simple to make!
Yet another recipe made with Cassava Flour, I told you this was my favorite paleo flour to use! These were a bit addictive. Soft and very flavorful, these paleo apple spice cookies are a great gluten-free option for fall gatherings!
Apple, cinnamon and nutmeg come together nicely to flavor these cookies, and the sweetness of the maple syrup adds the perfect touch to the flavor profile. These cookies taste like a breezy fall afternoon. Or, at least, that’s what I think about when I bite into these cookies, even if the weather in Texas isn’t very fall-like yet.
These Paleo Apple Spice Cookies will definitely be a repeat recipe this fall, I will be making these again, and again! My mouth is watering just thinking about them. I just love eating apple-flavored dishes in the fall, and these cookies had the right amount of cinnamon, maple and nutmeg to taste like an old-fashioned fall apple-cookie!

- 1 1/2 cup cassava flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup grass-fed butter softened
- 1 cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 large apple diced small

Preheat an oven to 350 degrees F.

In a bowl, add the softened butter, maple syrup, egg, and vanilla and mix well.

In a large bowl, add the flour, cinnamon, nutmeg, baking soda, baking powder, and salt and mix.

Pour the wet ingredients into the dry and mix until everything is combined.

Stir in the chopped apple.

Line a baking sheet with parchment paper. Drop the batter by rounded teaspoons onto the baking sheet.

Bake for 10-12 minutes, until they are lightly golden-brown.

Place onto a cooling rack and let cool for at least 5 minutes. Enjoy!
Cover loosely when storing
