January is rolling by, how is your 2018 going? Is it cold where you are? It has finally started to warm up here in Texas, but it was pretty darn cold for a while. This Florida-raised girl does not enjoy the cold that much. Growing up, if it got any lower than 70 degrees outside it was cause for a sweater. And I’m very cold natured. So when it was in the 20’s here in Texas I was freeezing! I am definitely welcoming the warmer weather!
Lately I’ve been making fancy-ish dinners for my husband and I on Sundays to enjoy in the dining room with a glass of wine and classical music. You know, all romantic and stuff. “Fancy-meal-Sundays” are what we’ve been calling it, and it’s really nice. I wanted to start using our dining room more often, since we mostly eat at the breakfast table. This past Sunday I was going to roast some brussels sprouts and bake a sweet potato for our meal, but I decided to combine them and add some ingredients, and came up with this bacon maple roasted brussels and sweet potatoes.
This made for a delicious side that complimented our pork and red wine nicely! And it was pretty simple to make, and you know I’m a fan of simple! Easy recipes are the best.
My husband and I both loved these Bacon Maple Roasted Brussels and Sweet Potatoes. I served this along with my Honey Sage Pork Chops and it was delish! The maple syrup adds a nice hint of sweetness to the vegetables, and the bacon adds the saltiness to compliment it. The result is a savory, slightly sweet and salty side dish that tastes great!

- 2 medium sweet potatoes diced
- 2 cups brussels sprouts halved
- 1/4 cup walnuts
- 1 Tbsp avocado oil
- 1 Tbsp maple syrup
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 slices bacon cut into small pieces

Preheat an oven to 425 degrees Fahrenheit.

Place the diced sweet potatoes, brussels, walnuts, salt, pepper, maple syrup and oil into a large bowl. Toss to coat until everything is evenly mixed and coated.

Spread the veggies evenly onto a baking sheet. Cut up the bacon and layer the slices over the top of the veggies.

Place into the oven and bake for 20 minutes.
Then turn the oven on broil and bake for about 2-3 minutes, until the bacon has gotten crispy.

Remove from the oven and let cool. Serve and enjoy!
