It wasn’t too long ago when I purchased my first bag of cassava flour in my August Thrive Market haul, excited to give this paleo flour a try. Shortly after I made my Strawberry Cassava Flour Waffles and knew that I had fallen in love with this flour. I’ve been on a waffle kick lately (I mean, who doesn’t love a good waffle?), so I once again went to work on a new waffle recipe.
Did I mention that I am in love with cassava flour? It has definitely become my favorite paleo flour to cook with and I think I will always have some on my pantry from now on. It was the perfect base for these paleo Banana Bread waffles.
This recipe comes just in time for fall, which is perfect because the Maple Cinnamon Butter added over the top gave it a nice fall flavor. These waffles were delicious! It was like having dessert for breakfast!
These paleo banana bread waffles with maple cinnamon butter are nice and fluffy and a perfect way to start your morning. If I had to eat these every morning I wouldn’t be mad about it. These were tasty, sweet and delicious!

These paleo Banana Bread Waffles with Maple Cinnamon butter drizzled over the top are the perfect, sweet gluten-free breakfast!
- 2 cups cassava flour
- 2 Tbsp maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp salt
- pinch nutmeg
- 1 cup nut milk
- 2 ripe bananas mashed
- 2 eggs
- 1/4 cup coconut oil melted
- 1 tsp vanilla extract
- 2 Tbsp grass-fed butter melted
- 2 Tbsp maple syrup
- 2 tsp cinnamon

Preheat and oil your waffle iron.

In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon and nutmeg until well combined.

In a separate bowl, add the bananas, nut milk, maple syrup, coconut oil, eggs and vanilla and mix until thoroughly combined.

Add the wet ingredients into the dry ingredients and stir until smooth.

Scoop 1/4 of the batter into the waffle iron, and follow the instructions of you waffle iron to cook the waffles.

Mix the ingredients for the maple-cinnamon butter in a small bowl. Pour over the waffles and serve. Enjoy!
