What can be better than waking up to a warm, cooked homemade meal? With this Paleo Crockpot Breakfast Casserole, you can get the ingredients ready in the slow-cooker the night before and sleep soundly knowing that you will have a cooked meal ready for you in the morning!

I have said before that I love crockpot meals. It’s nice to dump ingredients into it in the mornings and then come home to have dinner already cooked. Especially since I work out in the evenings and we don’t get home from the gym until after 7:30pm most nights. That means we don’t eat until almost 8:30pm most nights if I am cooking (which I usually am). But I never thought of using my crockpot for breakfast until recently. I don’t know why, it was really nice to wake up to a cooked meal! Oh, and did you know there were things called crockpot liners? I don’t know why I didn’t know about these, but they make life even more easier, since cleaning the crockpot isn’t the easiest thing to do, depending on your crockpot. Make sure the ones you use are BPA free.
This is simple to make and is a great tasting paleo breakfast recipe. If you have followed me in the past then you might know that I am a fan of casseroles, especially breakfast casseroles. Take a look at the other ones I love to eat:

Breakfast is probably my favorite meal. We have breakfast for dinner a lot.
If you prefer, you can even have this crockpot breakfast casserole for dinner instead!
This was tasty and a great meal to wake up to. I love using sweet potatoes in breakfast meals. Sweet potato, sausage and bacon make for a yummy combination. And the onions and peppers help bring out the sweetness and add more flavor to the dish. Enjoy this paleo breakfast recipe, let me know if you like it!
- 12 eggs
- 2 lbs sweet potatoes shredded
- 1/2 sweet onion diced
- 1 green bell pepper diced
- 1 lb breakfast sausage
- 6 slices bacon cut into pieces
- 1 tsp salt
- 1/2 tsp black pepper

Grease your crockpot or crockpot liner with oil or butter. Shred your sweet potatoes.

Heat a skillet to medium high heat. Add the sausage and cook, breaking apart with a spatula. Cook for 10 minutes, or until there is no pink left. Remove from pan and drain on paper towels.
Add the bacon to the pan and cook.

Layer the shredded sweet potatoes along the bottom of the crockpot. Then layer on the sausage, onions, peppers and bacon.

Beat the eggs, salt and pepper together. Pour the eggs over the top of the casserole evenly. Use a butter knife to stir around and blend ingredients.

Set the crockpot to cook on low for 7-8 hours (I had mine cook for 8). Go to bed and have sweet dreams about bacon and sausage.
