I’m starting to put my crock-pot to good use. They are wonderful things! How great is it to dump all of the ingredients in the slow cooker in the morning, then come home from work to dinner already cooked? And pork is great for the crock-pot. Pork tenderloin, pulled pork, carnitas…it all comes out nice and tender in the slow-cooker! Have you tried my super easy Pork Tenderloin with apples and pears? Or the Pulled-pork BBQ stuffed sweet potatoes?
Carnitas are one of my favorite Mexican dishes. These slow cooker green chile pork carnitas are made with 3 types of green peppers for a bit of a kick, and a lot of flavor. These come out juicy and tender. You will find the video for these at the end of the post. These would be great for Cinco de Mayo! I actually have drill on Cinco de Mayo, so I don’t think I can enjoy these then, but we’re definitely having these for Taco Tuesday!
These are great for meal-planning too. It makes plenty, so you can have leftovers during the week! You can serve these slow cooker green chile pork carnitas in burrito bowls, eat them plain, or my favorite–make them into tacos! If you haven’t tried Siete Foods Tortillas, they are amazing! They are gluten-free and grain-free, and you wouldn’t guess so! They have a store locator on their website, but you can usually find them at Whole Foods. Their grain-free tortilla chips are great as well!
This is a nice and simple paleo recipe, and it’s also Whole 30 approved!

These Slow Cooker Green Chile Pork Carnitas are simple and tasty, with a little bit of a kick! Spice up your dinner with this easy recipe!
- 3-4 pounds pork shoulder roast
- 1 yellow onion sliced
- 2 jalepeno peppers seeded and diced
- 1 green bell pepper diced
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp cumin
- 1 Tbsp olive oil
- 1/2 cup chicken broth

Slice and dice up your onion, peppers and garlic.

Place your onions into the bottom of a slow cooker.

Place your pork roast over the onions and sprinkle with the salt, pepper and cumin. Rub the spices around the pork to coat. Pour the oil over the top.

Add the peppers, garlic and chicken broth. Cover and let it cook on low for 8-10 hours, until it shreds easily with a fork. Use two forks to shred the meat and remove from the slow-cooker.

Top with fresh cilantro and lime. Serve and enjoy!
