Paleo Mixed Berry Jelly is easy to make, and free of artificial sugar or sweeteners and preservatives. Enjoy some jelly made with whole foods!


Here is my third paleo jelly recipe.  I wanted a mixed berry jelly that wasn’t too tart, so I used more strawberries than the other berries to balance out the sweetness.  This one might be my favorite! I can eat it out of the jar (and may have done so).

The lemon juice adds natural pectin which will help it to set, but it will need to cook for a little longer than regular jam to thicken.

Ingredients
  • 1 cup strawberries
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1 Tbsp lemon juice
  • 1/4 cup honey
Instructions
  1. In a saucepan over medium heat, add the berries, and cook for about 5 minutes, or until they have broken down and started to gel.
  2. Add the honey and lemon and cook for 15-20 minutes, until the sauce has started to thicken.
  3. Reduce heat to low, and simmer for 15-20 minutes.
  4. Remove from heat and place into a glass jar. Refrigerate and consume within 3 weeks.
