I apologize for the lack of posts recently. Life has been pretty busy, and I also spent three weeks in Louisiana for Basic Leadership Course (BLC) with the Army, which is a requirement in order to be promoted to a Non-commissioned Officer (NCO). That means I am now a Sergeant! BLC was a bit rough at times, mostly due to the fact that it was SUPER hot and humid in Louisiana. But I did enjoy my time there and had some fun. I had a great study group, and my instructors were hilarious, which made classes fun. There wasn’t a whole lot to do within 30 miles of Camp Cook, besides Wal-Mart and Texas Roadhouse, so a lot of our free time was spent there when we weren’t doing homework in the classroom. Graduation finally came and I was so glad to be home! Although it is pretty hot in Texas, it feels much more tolerable to me compared to the humidity in Louisiana. I should have a few new recipes coming your way in the next few weeks!
I have been sitting on this recipe for a while, and had it jotted down but it was one of those that got lost in the midst of all my other notes and papers. When I stumbled across it last week, I thought, why haven’t I made these yet? These would be a perfect summer recipe!
These Honey Chipotle Chicken Tenders have a bit of a kick to them, but the spiciness of the chipotles paired with the sweetness of the honey and the tanginess of the lime make for a deliciously flavored meal if you like spicy food! I have always loved spicy foods, but over the years my tolerance has diminished slightly. These were just the right amount of spicy to give me a kick, but not knock me off my feet.
These chipotle honey chicken fingers were incredibly easy to make, and did not take long to cook at all. I baked these in the oven when I made them, but these would make for a great grilled dish if you have a grill. The recipe is as simple at blending the marinade in a blender, marinating the chicken, then cooking for only about 30 minutes!

Spice up your summer with these paleo Honey Chipotle Chicken tenders! These chicken fingers made with whole ingredients are simple to make and pack a bit of a kick!
- 2 chipotle chiles in adobo sauce
- 1 Tbsp adobo sauce
- 3 cloves garlic
- 1 Tbsp olive oil
- 1 lime juiced
- 3 Tbsp honey
- 1/2 tsp salt
- 2 lbs chicken breasts cut into strips

Place the garlic cloves into a blender and pulse until the garlic has minced.

Add the chipotles, adobo sauce, olive oil, lime juice, honey and salt into the blender. Blend until everything is well combined.

Cut the chicken breasts into strips. Place into a bowl and pour the sauce over them. Toss until the chicken is evenly coated. Cover and place in the refrigerator and let marinate for at least 4 hours.

Preheat an oven to 400 degrees fahrenheit.

Line the chicken tenders onto a baking sheet lined with foil. Bake for 10 minutes on each side, or until the chicken has cooked through and there is no pink left. Remove from oven and let cool.

Top with cilantro and serve with lime wedges (if desired). Enjoy!
