I love cooking salmon. Salmon makes for a great, healthy protein rich in Omega-3 fatty acids, and it’s easy to cook. I frequently pair my salmon with avocado as I always thought the flavors paired well, so that was the basis for coming up with this recipe. And I love using my Spiralizer to make “zoodles,” they are a great, healthy, gluten-free alternative to regular noodles. It’s so easy to make with the spiralizer. You just chop off the ends of your zucchini, place it flat onto the spiralizer, and start turning!
If you don’t have a Spiralizer, I would definitely recommend one. Not only can you make zucchini noodles, but it can also be used it for sweet potato noodles and slicing a variety of vegetables. This is the Spiralizer that I use.
This Lemon Basil Avocado Salmon with Zoodles is fairly easy to make, and I used one pan to cook everything in. The first thing I did was spiralize the zucchini into noodles, and set it aside in a colander with salt to drain.
The I made the sauce. The sauce is easy to make, all you do is throw all of the ingredients into a food processor.
Then blend it all together in the food processor until it is smooth and creamy.
After that, all that’s left is to saute the Zoodles, which only takes a few minutes, then pan sear the salmon for 5 minutes on both sides. The you put it all together and you’re done!
This Lemon Basil Avocado Salmon with Zoodles was delicious! The flavors of the topping blended well together and complimented the salmon nicely. We felt like we were eating a fancy dinner, when it had really just taken me less than 30 minutes in my own kitchen to make this!
I also love that this is a meal that can be enjoyed while doing Whole 30. All of the ingredients are compliant, and this makes for a great gluten-free, dairy-free, grain-free meal made with real-food ingredients.

- 2 medium zucchini
- 1 medium avocado
- 1 lemon juiced
- 6 basil leaves
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 cup olive oil plus 1 Tbsp for cooking
- 1 Tbsp water
- 2 filets salmon
- salt & pepper to taste

Spiralize the zucchini to make noodles. Place in a colander and sprinkle with salt. Set aside and let drain.

Place the avocado, basil leaves, lemon juice, garlic, salt, olive oil and water into a food processor and blend until it is smooth and creamy.

Heat a tablespoon of olive oil in a skillet over medium high heat. Add the zoodles to the pan and saute for 3-5 minutes, until they have softened slightly, or are al dente. Remove from pan.

Sprinkle the salmon with salt and pepper and sear on each side for 4-5 minutes, to desired done-ness and remove.

Serve the salmon atop a bed of zoodles, and top with the avocado sauce. Top with fresh basil, if desired. Serve with extra sauce for the zoodles, if desired. Enjoy!
