You know I am a fan of fast, easy meals. Especially those with very little clean-up. These Lemon Paprika Chicken and Shrimp Skewers only takes about a half-hour tops from prepping to eating. Gotta love that!
I made these with both chicken and shrimp, but you can definitely have just one or the other if you prefer. I had a lot of both, so I had a whole tray of shrimp on the top shelf and a tray of chicken on the bottom.
These took little time to prep and ten minutes to bake. So easy and delicious! The Lemon Paprika sauce makes for an great flavor!
- 1 lb shrimp peeled and de-veined
- 1 lb chicken breasts slice into thin strips
- 4 Tbsp ghee or grass-fed butter, melted
- 1/4 tsp garlic powder
- 1/2 tsp paprika
- 1 lemon
- Bamboo skewers
-
Preheat oven to 450 degrees.
-
Soak the skewers in water for at least 10 minutes, this will prevent them from burning in the oven.
-
In a small bowl, combine the melted butter, garlic powder, paprika, and juice from the lemon and mix until it is thoroughly combined.
-
Thread the shrimp and the chicken onto the skewers, and place onto a baking sheet. Sprinkle each side with a pinch of salt and pepper.
-
Lightly brush the butter mixture over the meat.
-
Place into the oven and bake for 5 minutes. Remove, then flip to the opposite side. Brush the meat again with the mixture and bake for an additional 5 minutes on the opposite side.
-
Remove from oven and brush with any remaining mixture, then serve immediately.
-
Enjoy!
