These Meat Stuffed Sweet Potatoes are simple and delicious, and full of yummy flavor! This makes for a tasty, easy paleo meal!

Last week I have a leftover baked sweet potato in my fridge. I love sweet potatoes and can just eat them plain, but I wanted to do something different, but quick. So I came up with this stuffed sweet potato, and my boyfriend and I loved it! It is pretty darn easy as well, baking the sweet potato would take the longest time, if you don’t already have one pre-baked like I did.
- 4 Large Sweet Potatoes
- 8 oz Grass Fed Ground Beef
- 4 Slices of Bacon
- 2 Tbsp Balsamic Vinegar
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 1 tsp Salt
- 1 tsp Black Pepper

First, bake your sweet potatoes. Wash your sweet potatoes, poke holes in them with a fork, and bake in a 400 degree oven for 1 hour, or until they are soft.
Alternatively, you could microwave them if you'd like to save time.

Cook your bacon slices in a skillet until they are done, and set bacon aside. Pour out the bacon grease and save to use for salad.

Add the ground beef, balsamic vinegar, onion powder, garlic powder, salt and pepper into the skillet and cook together until the beef is done.

Scoop out the insides of the sweet potatoes, leaving just a little on the skin, and place in a large bowl and mash. Crumble 2 slices of your bacon and add it to the bowl, along with the ground beef, and mix together.

Scoop your mixture back into the sweet potato shells. Crumble the remaining 2 slices of bacon and sprinkle on top.
