I mentioned before that I am a big fan of one pan meals. Especially since my husband and I usually don’t eat until late in the evening, and being the “old lady” that I am, I like to try to minimize my time spent in the kitchen on weeknights so I can get the chores done and into bed early. This is a very simple salmon recipe that I like to make for us. It only takes one pan, and it doesn’t take up too much of your time.

This is one of my go-to weekly dinner meals to cook for my husband and I after coming home late from the gym. Little cleanup, especially if you cover the pan with foil, and it tastes great!
This glaze has been my go-to salmon glaze for a long time. It’s simple, and the flavors of the balsamic, honey, and Dijon mustard complement each other well to make for a tasty meal.
Don’t you just love simple paleo weeknight meals?
- 2 salmon filets
- 1 Tbsp Honey
- 1 Tbsp balsamic vinegar
- 1/2 Tbsp Dijon mustard
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 sweet potatoes sliced
- 1 cup broccoli florets

Heat an oven to 425 degrees.

On a baking sheet, place the sliced sweet potatoes and broccoli. Drizzle with 2 Tbsp oil and sprinkle with salt and pepper, and toss with hands to coat evenly.

Place in the oven and bake for 5 minutes and remove.

In a small bowl, combine the honey, balsamic vinegar, mustard, garlic powder and onion powder.

Add the salmon filets to the pan. Sprinkle the salmon filets with a pinch of salt and pepper, then brush the honey mixture over the top of the salmon.

Place pan back into the oven and bake for 15 minutes, or until salmon is done.

Remove from oven and let cool. Then serve and enjoy!
