This Whole30 Cashew Chicken Recipe combines orange, cashews and red peppers in an easy, soy-free, tasty Whole 30 meal with great flavor. This was easy to make and only took me about a half an hour to make.

Happy Monday, lovely people! How was your weekend? Before I made this Whole 30 cashew chicken recipe I got locked in a room with 7 other people and had to escape.
My husband and I got together with some friends to do a puzzle room. Basically, you are locked in a room and you have to solve puzzle to unlock various things that will help you out of the room, and you have an hour to complete it. We went to 15Locks and did their largest room, Lab Rats which can hold 8-24 people. Sadly, we did not solve it in time, but I think if we had more people we would have been able to do it. We will definitely be going back with more people to try to solve it. If you are in Austin near the Wells Branch area I would highly recommend 15 Locks, we have done all of their rooms and they are a blast! The puzzles are done really well and they try to help you along when you get stumped.
How yummy does this Whole30 Cashew Chicken Recipe look?
This Whole30 Cashew Chicken Recipe is another tasty Whole 30 meal. This was fairly easy to make and didn’t take too much time, and it was delicious! Since I am allergic to soy I can’t indulge in these types of dishes at restaurants, but I can make my own! I always loved cashew chicken, and the orange adds a nice sweet, tangy flavor.
- 1/4 cup raw cashews
- 1 lbs boneless skinless chicken thighs, cut into bitesize pieces
- 1/4 cup arrowroot starch
- 3/4 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp coconut oil
- 1/2 small white onion cut into cubes
- 1 red bell pepper cut into cubes
- 1/2 tsp ground ginger
- 1/4 cup coconut aminos
- 1/2 Tbsp apple cider vinegar
- Juice from 1 orange about 1/2 cup fresh orange juice
- Zest from 1 orange
- 1 clove garlic minced
- green onions for topping
- 1 Tbsp sesame seeds optional, for topping

Heat a skillet over medium heat. Add the cashews and toast for 5-7 minutes, stirring constantly until they begin to brown slightly. Remove and set aside.

Add the chicken, salt, pepper and arrowroot powder to a bowl and toss to evenly coat. Heat the oil in the pan. Add the chicken and cook for 5 minutes.

Add the pepper, onion, garlic and ginger to the pan and cook for 5-7 minutes, until the chicken is done.

Add the coconut aminos, apple cider vinegar, orange juice, zest and cashews to the pan and stir. Lower the heat and stir for 2-3 minutes, letting the sauce reduce.

Serve in a bowl topped with sesame seeds and green onions. Enjoy!
