Hello everyone! I haven’t updated as much lately. Life’s been fairly busy, but great. A couple of weeks ago, I took a trip down to my parents’ house in Florida to go wedding dress shopping with my mom, my sister-in-law (one of the bridesmaids) and my Maid-of-Honor.
What a fun experience! I have been looking forward to the day I got to try on wedding dresses since I was a little girl. It was a completely new experience for me too. Growing up, I never went to prom or had a fancy sweet sixteen or had any excuse to try on any elaborate, fancy dresses. So it was really fun trying on all of these gorgeous dresses and feeling so elegant, and like a princess! I had made five appointments, and at the first appointment we thought we had found the one. Then, at the second appointment, we found a dress that seemed to top the first one. However, later that night, when comparing pictures, it seemed as if the first dress appeared to be a better choice. Of course, they look different in person than they do in photos since photos are only two-dimensional, but I like to look at photos because there will be hundreds of photos snapped on my wedding day, and I want to make sure that it is a dress that’s flattering in photos as well. Plus, it’s nice to be able to compare dresses side-by-side.
On the next day, there were two more appointments. The first one was a bust, and the consultant wasn’t very helpful or friendly either. So we broke for lunch and to get pedicures. Then, at the next appointment, I tried on a dress that I had favorited online, one that I couldn’t stop looking at. And when I tried it on it seemed to be perfect! I was so happy!! They gave us a free glass of champagne and I placed my order. It’s so great to have that part finished, no stressing about getting a dress ordered in time or struggling to find something that seems right.
Anyway, I like to make banana pancakes for my fiance and I a lot. I had tried the 1-banana-2-eggs pancakes, and they are good, but to me they almost seemed more like crepes, and I like my pancakes a little fluffy. So I took those ingredients and added a few more of my own to make them a bit fluffier, and they are also a bit easier to flip in my opinion.
These are nice and thick and fluffy. I found that I didn’t really need any syrup on my pancakes, they tasted great without. But you can always add a bit of pure maple syrup for some added sweetness!
- 1 Banana mashed
- 2 Eggs
- 2 Tbsp Coconut Flour
- 1/4 tsp Cinnamon
- 1/4 tsp Baking Powder
- 2 Packets Stevia optional

Add your mashed banana, stevia and eggs to a mixing bowl, and beat together until well blended.

Add in the coconut flour, cinnamon and baking powder and mix until thoroughly combined.

Melt 1 Tbsp of butter or coconut oil to a skillet over medium heat. When the pan is warm, use a 1/4 cup scoop to drop the batter into the pan.

When the edges are cooked and it seems to be able to handle it, carefully use a spatula to flip the pancake over.

Cook until both sides are a light, golden brown.

Top with some Pure Maple Syrup if desired and enjoy!
