Paleo “Elvis” Waffles

Elvis was popular for his banana, peanut butter and bacon sandwiches.  I decided to put my own spin on the flavors to make these Paleo Elvis Waffles, which are delicious, and a super tasty gluten-free breakfast to start your day!

I LOVE these Paleo Elvis Waffles!

I have been planning on making these for a while now and am so glad that I did.  These were so good! To make this a paleo recipe (and since I found out through Whole 30 that my body isn’t very fond of legumes) I used almond butter in the waffle batter.  Combined with the banana and bacon in the batter, these waffles made for a nutty, sweet and salty treat! I want to eat these paleo waffles every morning!

I use a Belgian Waffle iron, and this recipe made me 3 gluten free waffles. There is bacon and banana in the batter, but I topped mine with a little extra of each for some extra flavor.  Pour some pure maple syrup over the tops and these are a yummy paleo breakfast!

Ingredients
  • 1/2 cup almond butter
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1 banana mashed
  • 1 Tbsp coconut oil melted
  • 1/3 cup almond milk
  • 1 Tbsp almond flour
  • 1/2 tsp baking soda
  • pinch sea salt
  • 4 slices bacon
For Topping (optional)
  • 1 banana sliced
  • 2 slices bacon cooked and sliced
Instructions
  1. Slice up your bacon and cook in a skillet over medium-high heat until done. Set aside on a plate with paper towels to drain.

  2. Preheat a waffle iron and coat with oil.

  3. In a large mixing bowl, combine the almond butter, eggs, banana, vanilla, coconut oil and almond milk and mix well until everything is combined and there are no lumps.

  4. Stir in the almond flour, baking soda and salt and mix well. Add the bacon and fold into the mixture.

  5. Spoon the batter into your waffle iron and follow the directions for your waffle iron, or cook until they are golden brown and slightly crispy amd remove. Repeat with the remaining batter (made about 3 Belgian waffles for me). 

  6. Top with sliced banana, bacon crumbles and maple syrup and enjoy!!

  3. Hi can these be made into pancakes if I don’t have a waffle iron?

    • Hi Tammi, I haven’t tried them as pancakes yet, but I’d probably leave out the coconut oil from the batter to make them into pancakes.
