I don’t know about you, but I love chicken thighs! They’re my favorite part of the chicken to eat. Always nice and tender, and fairly inexpensive. I like to buy a big pack for my husband and I and bake them on Sundays, and they make for good lunches throughout the week. Great if you’re trying to meal-plan!
If you know me, you know I am a fan of simple, easy recipes. Especially during the week when life gets busy. This recipe is only 3 ingredients, and doesn’t cost a lot to make. Just mix the ingredients, marinate, and bake!
I love how simple these Paleo Hawaiian Chicken Thighs are, and even though the ingredients were minimal, that did not sacrifice the flavor. This had a lightly sweetened coconut flavor with a slight tangy taste. The balsamic vinegar adds a little tartness to complement the sweetness of the maple syrup and the coconut milk.
Once baked, the skin on the thighs has a nice crispiness to it, and the meat is tender and moist.

These Paleo Hawaiian Chicken Thighs are only 3 ingredients and simple to make. With a sweet, coconut flavor, this is a great, easy paleo meal to make for the week!
- 4 lbs chicken thighs bone-in, skin on
- 1 can coconut milk 13 oz
- 1/4 cup balsamic vinegar
- 1/4 cup maple syrup

In a large bowl, mix add the coconut milk, balsamic vinegar and maple syrup and whisk to combine.

Add the chicken thighs to the bowl and mix well to coat. Cover the bowl and set in the fridge to marinate for at least 4 hours. The longer, the better.

Preheat an oven to 400 degrees Fahrenheit. Place the chicken skin side down on a large baking sheet. Place in the oven and bake for 20 minutes.

Once 20 minutes has passed, remove the sheet from the oven and flip the chicken. Bake for an additional 20 minutes, or until the chicken is cooked through and the skin is browned and lightly crispy. Serve and enjoy!
