Sorry for the lack of recipes lately. There are two weeks until the wedding, and once we come back from the honeymoon and have settled back into a normal life I will have more time to cook and blog. I’ll also update more next weekend about the Open. In the meantime, I do have at least one new recipe to indulge you with!
You know I love chicken thighs, so I used this recipe on thighs. But this glaze could easily be used on chicken legs, chicken breasts, or even a whole roasted chicken!

- 4 lbs chicken thighs other parts of chicken can be used
- 1 cup freshly squeezed Orange juice
- 1 1/2 tbsp honey
- 1/8 tsp garlic powder
- 1/8 tsp onion powder
- 1/4 tsp black pepper
- 1 tbsp arrowroot starch
- 1/4 tsp salt
-
Preheat the oven to 400 degrees Fahrenheit. Wash and pat dry the chicken. Brush each side of chicken lightly with olive oil, and sprinkle both sides with a dash of salt and pepper. Place on a roasting rack in a large roasting pan. Roast the chicken thighs for 30 minutes.
-
In a saucepan, whisk together the orange juice, honey, spices and arrowroot powder. Bring the sauce to a bowl on medium-high heat. Reduce heat and whisk until the sauce has thickened.
-
Once the chicken has baked for 30 minutes, take out of the oven. Coat both sides liberally with the glaze. Place back into the oven and bake for an additional 15 minutes.

Serve and enjoy!
