I love making my own homemade salad dressings.  It’s a great way to flavor your salads, and you know exactly what you are eating.  No additives or preservatives, just whole, real food.  My Sweet Strawberry Dressing is a favorite for a nice added sweetness to your salads, but this Roasted Garlic and Rosemary Vinaigrette adds a delicious, savory flavor to your greens!

I absolutely love roasted garlic, and could just eat them straight out of the oven.  And the smell of roasted garlic is just amazing, in my opinion.  So I knew I just had to use some in my next homemade salad dressing recipe.

This is probably my favorite salad dressing that I have made.  The flavors of roasted garlic and fresh rosemary compliment each other nicely to make for a savory dressing.  And making your own salad dressing is so simple! All you really need in most cases is a blender.  Since we are roasting garlic in this recipe, you also obviously need an oven.  I used a whole head of garlic to make this dressing.  You will just want to cut off the tip of the head, drizzle it with olive oil, and roast it for 35-40 minutes.

Servings: 1 cup
Ingredients
  • 1 head garlic
  • 1 Tbsp rosemary leaves
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • 1 tsp maple syrup
  • 1 Tbsp dijon mustard
  • 1/4 tsp pepper
  • 1/4 tsp salt
Instructions
  1. Preheat an oven to 375 degrees fahrenheit. Cut the tip of the garlic head off so that the tops of the cloves are exposed.  Place onto a baking sheet and drizzle with olive oil. Roast for 35-40 minutes, until the top is browned.

  2. Let the garlic cool, then remove the cloves and place into a blender.  Add in the remaining ingredients and blend until smooth.

  3. Store in the fridge.  Enjoy!
