This Paleo Sausage and Sweet Potato Casserole is an easy, casserole dish that is super tasty!

Right now I am watching Crossfit’s “Fittest on Earth,” which is on Netflix now. Pretty interesting to watch some of the best athletes behind the scenes during their time at the crossfit games, how hard they train and what goes through their minds during what is probably the most intense few days of workouts for them. It’s amazing to see what they can do. I will never be at their level. That takes a lot of time and dedication, to be able to train your body to be able to do everything they can do. I love crossfit, but I would never want to compete on that level.
Anyway, you probably already know that I love casseroles. This one was pretty great! The sweet potato went along nicely with the Italian sausage.
This wasn’t too complicated, and although I made it as a dinner entree, I had it for breakfast one morning as well, and it was great!
Such an easy paleo casserole dish. Make this to eat throughout the week and you’ll have dinner or breakfast already set!
- 2 medium sweet potatoes diced
- 1 Tbsp oil
- 1 lb ground Italian sausage
- 3 eggs
- 1/2 cup almond meal
- 1/2 yellow onion diced
- 2 cloves garlic minced
- 1 tsp sage
- 1/4 tsp rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper

Heat an oven to 425 degrees. Place the diced sweet potatoes on a baking sheet, drizzle with a small amount of oil, and toss with hands to evenly coat them. Bake in the oven for 20 minutes. Remove from oven and lower the temperature to 350 degrees.

In a large skillet, heat the tablespoon of oil over medium-high heat. Add the onion and garlic, and cook for about 3 minutes, until the onion is translucent.

Add the sausage to the pan, and cook until there is no pink left in the sausage.

Add the sage, salt, pepper, and rosemary, and stir until mixed thoroughly. Remove from heat and place sausage mixture in a bowl.

Once the sausage mixture has cooled a bit, add the almond meal and beaten eggs to the bowl, and stir until everything is well combined.

In a greased 8x8 baking dish, add the diced sweet potatoes. Then, layer the sausage mixture over the top of the potatoes.

Place in the oven and bake for 45 minutes t o an hour, or until the eggs are cooked through.

Let cool before slicing an serving. Enjoy!
