Do you have a Spiralizer yet?  Why not?  They’re awesome!  They are great for making gluten-free alternatives for noodles.  Have you tried sweet potato noodles? Yum! Or Zucchini noodles? They’re a great, healthy alternative to typical pasta noodles.

I love mine and vow to use it more often.  This Spicy Chicken and “Zoodles” recipe is a result of that.  It’s super easy and pretty darn good!

 

The most complicated part of this recipe is spiralizing the zucchini, which only takes a few minutes.

Spicy Chicken and "Zoodles"

The spices on the chicken pair well with the zucchini noodles for a tasty, unique flavor.  This is an easy recipe that can be prepared on a weeknight, or on a weekend when you don’t want to spend too much time in the kitchen.  This recipe is also Whole 30 compliant!

Ingredients
  • 4 Tbsp ghee or grass-fed butter
  • 2 chicken breasts butterflied and halved
  • 1/2 tsp salt
  • 1 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/4 tsp paprika
  • 4 medium zucchini peeled and spiralized
Instructions
  1. In a small bowl, mix the spices together. Sprinkle evenly over the chicken breasts.
  2. Heat the butter over a skillet on medium to high heat. Add the chicken to the pan and cook for 3-5 minutes on each side, or until the chicken is cooked through and there is no pink left. Remove the chicken and set aside.
  3. Add the zucchini noodles to the pan. Saute for 5 minutes, until the "zoodles" have softened.
  4. Serve the chicken breasts on top of the noodles. Enjoy!
