It’s grilling season, and what better way to enjoy your veggies than to toss them on the grill? This Spicy Grilled Summer Squash has a kickin’ flavor, and is simple to make! Spice up your summer meals with this tasty side dish!

It can be a bit difficult to type with a cat on your lap, especially when he keeps insisting that you pet him with the hands you are typing with. And one hand will not suffice, you must use both! Wallowitz was originally named “Mayhem” before we met him, and at the time we didn’t understand why they picked that name for such a sweet, quiet, cute little boy.
He lives up to his original name. He is ever so curious about everything and wants you to pay attention to him at all times. And he constantly wants to be near us, which is cute but can be inconvenient when we are trying to work, or cook, or clean. But he is also very sweet, and too adorable and entertaining to be mad at.
Summertime means more grilling, and grilled vegetables are just so tasty! I used yellow squash and zucchini for this spicy grilled summer squash recipe. This is pretty simple and doesn’t take too long to make. The flavors combine well to give it a bit of a kick and a great savory taste.
I made this on Memorial Day for my husband and I, along with some grilled Rib-eye steaks. It made for a really delicious meal! This is a great paleo side dish for those summer evenings.
We loved the taste and the spice of this. It does have a bit of a kick to it, so if you don’t like things too spicy, you can always decrease the amount of red pepper flakes. But if you’re like me and you like thing a little spicy, then keep the recipe as is.
- 3 lbs summer squash (I used 3 yellow squash and 2 zucchini)
- 2 Tbsp olive oil
- 1 tsp salt
- 1 tsp red pepper flakes
- 1/4 tsp oregano
- 2 cloves garlic grated
- 1 tsp balsamic vinegar

Cut the ends of the squash off and slice diagonally into 1/4 inch slices. Place into a gallon ziploc bag.

Whisk the olive oil, balsamic vinegar and spices together . Pour into the ziploc bag with the squash. Toss to evenly coat. Let marinate for 5-10 minutes while you heat the grill.

Heat your grill to medium-high heat. Place the squash on the grill, and grill for 5 minutes on each side.

Remove from grill. Serve and enjoy!
