It’s Springtime! And that means better weather for grilling! I am always ready for warmer weather. I am not a fan of the cold. Growing up in Florida I was used to it being hot and humid all year round, and wearing shorts and flip flops at the beach on Christmas. When I moved to Texas, I thought the weather would be similar. But it can get cold here in the winters! Of course, cold to me is anything below 70 degrees. I have a heating pad at my desk at work to use when I get too cold…so I pretty much use it all day. We recently moved my desk closer to the window where it’s warm and it’s a big improvement.
Ever since we got our grill I have loved it. Some things just taste so much better over flame. I think I grilled every dinner for a solid week when we first got our grill, even though it was cold outside! It makes for easier cleanup in the kitchen too. And then my house doesn’t smell like food. Which is not really a bad thing, but sometimes I can still smell the remnants of dinner before I go to bed and it makes me feel hungry again.
This is a blend of spices that I like to use together on chicken a lot. Especially on the grill. It’s got the perfect combination of sweet and spicy to make for a tasty grilled dish. My husband and I loved this Spicy Maple grilled chicken. It pairs well with the Sweet Balsamic Roasted Carrots!
- 4 large chicken breasts
- 3 tsp paprika
- 1 tsp cumin
- 1 tsp onion powder
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/8 tsp cayenne pepper
- 3 Tbsp maple syrup
- fresh cilantro for topping optional

Preheat a grill over medium heat. Wash and pat dry your chicken breasts. Pound the meat to tenderize.

In a small bowl combine the spices and the maple syrup together until it is a paste-like mixture. Spread the rub evenly on both sides of the chicken breasts.

Place the chicken on the grill and grill for 7-10 minutes on each side, or until it is fully cooked.

Remove from grill. Top with fresh cilantro (optional). Serve and enjoy!
