Sweet Balsamic Roasted Carrots

These Sweet Balsamic Roasted Carrots are tasty! With a bit of maple and balsamic vinegar, these carrots are roasted in a sweet glaze and make for a delicious side dish.

Happy Monday, dear readers!  Are you ready to take on this week?  I hope everyone had a lovely weekend.  Did anyone watch Beauty and the Beast?

We saw it yesterday and we both loved it.  I thought they did a great job with it and it was well casted.  Beauty and the Beast was always my favorite, so I was really excited to see it.  I was not let down, I thought it was beautiful.  What did you think?

 

I made a version of these with baby carrots for my husband and I to go along with our grilled rib-eye’s on New Year’s Day, and they were so great that I wanted to make them again and share them with you all.  I chose regular sized carrots this time around, but you can still make these with baby carrots if you prefer.  I like using the bigger carrots.  Don’t they look pretty?

I love these.  The maple added a nice amount of sweetness to compliment the balsamic vinegar and spices.  I used to hate carrots when I was younger.  But I bet if I had eaten them this way I would’ve loved them!  They glaze nicely in the oven while roasting.  I paired these with some Spicy Maple grilled chicken breasts (recipe coming soon!) and it was a yummy meal!

These are easy to make and the recipe doesn’t involve too many ingredients.  Everything is all natural, real food.  I don’t think I will ever cook my carrots a different way now.  These were that good!

Sett Balsamic Carrots
Servings: 4
Calories: 127 kcal
Ingredients
  • 1 lb carrots peeled and halved
  • 1/8 cup olive oil
  • 1/8 cup balsamic vinegar
  • 1 Tbsp maple syrup
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Preheat an oven to 400 degrees and line a baking sheet with foil and lay the carrots out on the sheet.

  2. In a small bowl, add the olive oil, balsamic vinegar, maple syrup and spices. Whisk until well combined.

  3. Pour the mixture over the carrots and toss around with hands to evenly coat.

  4. Roast the carrots in the oven for 20-30 minutes, until soft and lightly browned.  Remove from the oven. Serve and Enjoy!
