Sweet Potato “Shepherd’s Pie”

I am definitely an introvert.
I am perfectly happy sitting at home with the cats reading a book, or watching Bloodline. Most of the time if I am at a big party, I will eventually start thinking “I wonder how much longer I should be here until I can go home?” I could survive a day without human contact.
That’s just how I am, and a big reason why I didn’t have many friends growing up. I also would shut people out because I was very insecure, and didn’t really learn how to be a good friend since I didn’t have many. I’m mostly just awkward around people in real life.  I don’t know how to socialize very well.
This blog is probably the most extroverted version of me you will “meet.” I am not very active on Facebook or Instagram. I try to be, but I’ll open the app and start scrolling, and become impatient, so I’ll close it and open the kindle app instead. I probably miss out on a lot…every once in a while someone will ask me “Did you see such and such on Facebook?” and I’ll usually reply “Noo….?”
I had always figured, if someone really wanted me to know something, they’d just tell me, right?
It seems that’s not always the case. Sometimes, someone will post something that is indirectly pointed at you, and apparently you are supposed to know that it is you they are speaking about (even though they have at least 200 other friends), and that they are upset with you. I haven’t really had this happen to me (that I know of, or remember), but I hear friends talk about instances like this all the time.
Anyway, I wasn’t really going anywhere with that, just some random-ish thoughts that I had after hearing some conversations this week.

This idea came about a week ago, when my husband and I both felt like eating something with sweet potato.  I was thinking of making my Meat Stuffed Sweet Potatoes but decided to change it up and make a sort of Shepherd’s Pie.  It’s similar to the stuffed sweet potatoes, but a bit lower in fat and with a few differences.  My husband really liked it, in fact he ate my leftover serving!  To be fair, I didn’t tell him I was going to eat it 🙂.

This is fairly simple too, especially if you bake your sweet potatoes in the microwave.

Sweet Potato "Shepherd's Pie"

Ingredients
  • 2 medium sweet potatoes
  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 Tbsp balsamic vinegar
  • 1 small yellow onion sliced
  • 3 Tbsp tomato sauce
  • 1 carrot sliced
  • 1/4 tsp cinnamon
  • 1/4 tsp chili powder
Instructions
  1. Cook your sweet potatoes--you can either bake them in an oven heated to 425 degrees for 45 minutes, or microwave them for 5-8 minutes, until they are soft.
  2. Preheat oven to 350 degrees.
  3. Add the ground beef to a large skillet over medium heat. Sprinkle it with the salt, pepper, garlic powder and onion powder. Cook until the beef is cooked through.
  4. Add the sliced carrots and tomato sauce to the beef mixture and mix well.
  5. Remove beef from pan and layer it along the bottom of an 8x8 baking dish.
  6. In a medium skillet over medium-high heat, add the balsamic vinegar and the sliced onions. Stir until the onions are caramelized, about 10 minutes.
  7. Layer the onions over the beef.
  8. Remove the sweet potatoes from their skin and mash well in a bowl. add the chili powder and cinnamon and mix well.
  9. Layer the sweet potatoes over the top of the mixture in the baking dish.
  10. Place in the oven and bake for 15 minutes.
  11. Remove and serve.
