Have you tried sweet potato noodles?
Well, if you haven’t, you probably should, because they’re pretty awesome. Especially if you love sweet potatoes. I do. Adding them to this recipe added a nice hint of sweetness to the dish.
If you don’t have a spiralizer, you can use a julienne peeler to make noodles, but that may prove to be a little more tedious. I would definitely recommend a spiralizer, I love mine! I have used it to make zucchini noodles, sweet potato noodles, curly fries–you can do so much with it, even slice onions faster. This is the Spiralizer I use. It was around $30, and it works great! I love it, and it makes it super easy to make your own veggie noodles!
To make sweet potato noodles with the spiralizer, peel the potatoes, then slice a piece off of the ends to make them flat, so that the teeth of the spiralizer can grab onto it. place the spaghetti blade in and start turning! I suggest cutting the noodles every so often, otherwise you end up with some very long noodles.
Once I added the ingredients to the pan to make the marinara sauce, my senses sparked. The smell made me feel like I was in a fancy Italian restaurant. Nope, I was still in my kitchen! Tasting the sauce was even better, and made me think wow, I made that? Once combined with the sweetness of the sweet potato noodles and the meatballs, my taste-buds were elated! This was fun to make, and even better to eat!
This sweet potato spaghetti dish was tasty and made for an enjoyable paleo meal. I think I want to use sweet potato noodles for all of my pasta dishes now!

- 2 medium sweet potatoes
- 1 Tbsp olive oil
- 1 lb ground chicken
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp oregano
- 1/2 tsp sage
- 1/2 medium sweet onion diced
- 1 clove of garlic minced
- 1 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1-15 oz can crushed tomatoes
- 1 tsp maple syrup omit for Whole30
- 2 Tbsp water
- 1/4 tsp basil
- 1/4 tsp rosemary

Heat oven to 400 degrees. Line a baking sheet with parchment paper.

In a mixing bowl, add all meatball ingredients and mix well. Rub hands lightly with a dab of olive oil and form small 1-2 inch meatballs, arrange on the baking sheet (yielded about 30 meatballs for me).

Place the meatballs in the oven and bake for 15 minutes. Remove.

Spiralize your sweet potatoes. In a pan over medium to high heat, heat 1 tablespoon of olive oil. Add the sweet potato noodles and cook for 5-10 minutes until they are your desired texture, turning frequently with tongs to keep from burning. or becoming stuck.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic to the pan and cook until the onion is translucent.

Add the tomatoes, syrup, water and spices to the pan and stir for a couple minutes, until the sauce is mixed well. Lower heat to low-medium.

Add the meatballs to the sauce. Stir for about five minutes.

Serve meatballs and sauce over the sweet potato noodles. Enjoy!
