This Paleo Three Meat and Sweet Potato Breakfast Casserole combines all of the tasty breakfast meats with the sweetness of sweet potatoes for a savory and flavorful meal!

This is a hit among my family and co-workers. This is one of my husband and I’s favorite things to eat for breakfast…or any meal! In the past, I had just made it as a scramble for us, but it had occurred to us that it would make for a great casserole.
This was the first breakfast casserole that I ever made. Once I did, I learned how wonderful breakfast casseroles are. Especially if you work during the weekdays. It’s great to have a casserole made ahead of time, so on those busy, rushed mornings you can pop a serving into the microwave and have a delicious breakfast.
Breakfast has always my favorite meal. I love a good breakfast with eggs, bacon, sausage, and this three meat and sweet potato breakfast casserole has all of that! And the sweet potatoes balance it out and add a nice flavor to the dish.
I have made this for my family, my co-workers, and my husband’s family, and they all enjoyed it. My dad and brother were hesitant at first about sweet potatoes in a breakfast meal, but they both loved it! This three meat and sweet potato breakfast casserole is always a hit!

- 1 medium Sweet Potato
- 6 slices Bacon
- 1/2 pound Sausage
- 4 slices Ham
- 6 Eggs
- 1/2 tsp Seal Salt
- 1/2 tsp Ground Black Pepper
- 1/2 tsp Red Pepper Flakes opt

Pre-heat oven to 425 degrees.

Peel and dice up your sweet potato and place into an 8x8 casserole dish. Lightly toss in olive oil to coat. Spread the potatoes out and bake in the oven for 30 minutes. When they are finished, remove from oven and lower the oven to 350 degrees.

While the sweet potato is baking, Slice up the bacon, and cook in a skillet until done. Place on a plate with paper towels to drain. Pour out the grease.

Next, cook your sausage in the pan until it is cooked through and there is no pink, and place on a plate with paper towels to drain.

Dice up your ham slices. Add to the pan and brown for about 2-3 minutes.

Spread the ham slices evenly on top of the layer of sweet potatoes.

Next, layer the sausage evenly over the top.

Sprinkle bacon evenly over top.

Crack you eggs into a bowl and add the salt, pepper and red-pepper flakes. Whisk until the eggs are all beaten. Then, slowly pour over the top of the casserole, making sure to distribute the eggs evenly.

Place the casserole into the oven and bake for 30-35 minutes, until eggs are cooked through. Let the casserole cool for at least five minutes before slicing. Serve and enjoy!
This makes an 8x8 casserole. If you'd like to make a 9x13 casserole (what I usually do) double the recipe.

I have also made this with butternut squash in place of the sweet potato, and it is good as well!
