Toasted Macadamia Nut Cold Brew

Good morning and Happy Monday! I hope you had a great weekend, are you ready to tackle a new week?  Is it hot where you are? I don’t know about the weather where you are, but in Texas it’s getting really hot! And on hot, summer days, instead of opting for my regular hot coffee, I’ve been loving cold brew coffee!

Cold brew coffee is a great, easy alternative to regular iced coffee. You don’t get that watered down taste, and it’s lower in acidity than coffee grounds that have been boiled. It’s also more concentrated and slightly higher in caffeine.

Toasted Macadamia Cold Brew Coffee

I would usually purchase bottles of Chameleon Cold Brew, which is delicious, but after hearing my sister-in-law talk about how simple it is to make your own I decided to start cold-brewing. And it’s so simple! You can use your favorite coffee to make your cold brew, and it ends up costing less. Make sure your coffee grounds are coarse and not too fine, otherwise you might have a cloudy or gritty coffee.

I use my french press to brew my coffee in because it makes things super-easy, but you can use any sort of container.

 

To make Cold-Brew Coffee:

  • Place 1 cup of coffee into your brewing container.
  • Add 4 cups of water to the container and stir gently to make sure all of the grounds are saturated.
  • Cover and let it brew at room temperature or in the fridge for at least 12 hours.
  • Using a nut milk bag, coffee filter or cheesecloth, line a strainer over a bowl and pour the coffee through it to filter out the grains. If you’re using a French Press, press the plunger to the bottom and pour.
  • Store in the fridge for up to 1 week.

This Toasted Macadamia Nut Cold Brew is my favorite way to drink coffee right now. The toasted macadamia vanilla sweet cream adds a creamy, nutty taste to the coffee and compliments it well. The macadamia creamer is simple to make and you will have enough to drink with your cold brew coffee throughout the week.

I found the natural sweetness of the macadamias and the dates to be enough for this cold brew coffee drink, but you can always add a teaspoon of maple syrup or a packet of stevia if you want a little extra sweetness.  This macadamia nut cold brew is a great way to start your day, I won’t have my iced coffee any other way right now!

Toasted Macadamia Cream Cold Brew Coffee

Toasted Macadamia Nut Cold Brew
Course: Drinks
Ingredients
  • 8-12 oz cold brew coffee see instructions above
Macadamia Nut Cream:
  • 1 cup raw macadamia nuts
  • 6 dates
  • 2 tsp vanilla
Instructions
  1. Heat a skillet over medium-high heat.  Add the macadamia nuts and toast for about 5-7 minutes, until they are lightly golden-brown and fragrant, stirring constantly so they don't burn.  Remove from pan.

  2. Place the macadamia nuts in a jar along with the dates.  Add 2 cups of water to the jar.  Let it soak for 24 hours.

  3. Strain the macadamia nuts and dates and discard the water, and add to a blender.  Add the vanilla and 2 cups of fresh water to the blender.  Blend on high for 5 minutes, or until it is creamy. It should be smooth and creamy, and there is no need to strain it.  

  4. Add your desired amount of cold brew coffee to a blender along with 1-4 tablespoons of the macadamia cream, and collagen, if desired.  Blend until it is frothy.  Pour into a glass or over ice.  Enjoy!
