Spicy Grilled Summer Squash

  • 3 lbs summer squash (I used 3 yellow squash and 2 zucchini)
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp red pepper flakes
  • 1/4 tsp oregano
  • 2 cloves garlic grated
  • 1 tsp balsamic vinegar
  1. Cut the ends of the squash off and slice diagonally into 1/4 inch slices. Place into a gallon ziploc bag.

  2. Whisk the olive oil, balsamic vinegar and spices together .  Pour into the ziploc bag with the squash.  Toss to evenly coat. Let marinate for 5-10 minutes while you heat the grill.

  3. Heat your grill to medium-high heat.  Place the squash on the grill, and grill for 5 minutes on each side.

  4. Remove from grill.  Serve and enjoy!
