Mince the garlic cloves and add them to a large bowl. Add in the oil, coconut aminos, dijon mustard, paprika, salt and pepper and whisk until it is thoroughly combined.
Add the steak to the bowl and turn to coat. Let the steak marinate for 30 minutes at room temperature.
Preheat a grill to medium high heat and lightly oil the grates.
Pat the steaks with a paper towel to remove some of the moisture. Grill the steaks for 5-6 minutes on each side until it is browned, then transfer the steak to a cutting board.
Let the steak sit on the cutting board for 10 minutes before slicing. Then slice against the grain of the meat.
