  • 3 large zucchini spiralized
  • 1 lb lean ground beef
  • 1 Tbsp olive oil
  • 1 yellow onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 can diced tomatoes
  1. Prep your veggies. Spiralize your zucchini and dice your peppers, onion and garlic.

  2. Heat the olive oil in a skillet over medium high heat. Add the peppers, onions and garlic and saute for about 3 minutes, until they are fragrant and the onion is translucent.  Remove from the pan and set aside.

  3.   Add the ground beef to the pan along with the spices (cumin, paprika, chili powder, salt, pepper and red pepper flakes). Cook until the meat has browned, breaking apart with a spatula. Remove from pan and set aside.

  4. Add the zucchini noodles to the pan and saute for 3-5 minutes, until the noodles have softened slightly.

  5. Add the beef, veggies and diced tomatoes to the pan.  Stir for 3 minutes, until everything is combined.

  6. Now you're ready to serve! Top with fresh cilantro and avocado and enjoy!
