These paleo Banana Bread Waffles with Maple Cinnamon butter drizzled over the top are the perfect, sweet gluten-free breakfast!

Ingredients
  • 2 cups cassava flour
  • 2 Tbsp maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • pinch nutmeg
  • 1 cup nut milk
  • 2 ripe bananas mashed
  • 2 eggs
  • 1/4 cup coconut oil melted
  • 1 tsp vanilla extract
For the Maple Cinnamon Butter
  • 2 Tbsp grass-fed butter melted
  • 2 Tbsp maple syrup
  • 2 tsp cinnamon
Instructions
  1. Preheat and oil your waffle iron.

  2. In a large bowl, mix the flour, baking powder, baking soda, salt, cinnamon and nutmeg until well combined.

  3. In a separate bowl, add the bananas, nut milk, maple syrup, coconut oil, eggs and vanilla and mix until thoroughly combined.

  4. Add the wet ingredients into the dry ingredients and stir until smooth.

  5. Scoop 1/4 of the batter into the waffle iron, and follow the instructions of you waffle iron to cook the waffles.

  6. Mix the ingredients for the maple-cinnamon butter in a small bowl.  Pour over the waffles and serve. Enjoy!
