  • 2 large zucchini spiralized
  • 3 Tbsp olive oil
  • 1 lb beef sirloin sliced into bite-sized strips
  • 1 cup broccoli chopped
  • 1 red bell pepper sliced
  • 1/2 cup button mushrooms sliced
  • 1 Tbsp ginger grated
  • 1/2 cup chicken broth
  • 2 Tbsp coconut aminos
  • 2 Tbsp tomato paste
  • salt & pepper
  1. In a large skillet, heat 2 tablespoons of oil over medium high heat. Sprinkle the steak with salt and pepper on both sides and place into the skillet. Stir-fry for 2-3 minutes, until it has lightly browned. Remove from skillet and set to the side.

  2. Add the pepper, mushrooms and broccoli and ginger to the pan and stir for 2 minutes. 

  3. Mix the broth, tomato paste and coconut aminos together in a bowl. Then add it to the pan, along with the zucchini noodles. Saute for 2-3 minutes until the noodles have softened.

  4. Add the beef to the pan and stir for 2 minutes, until everything is well combines and the beef is cooked through to your liking.Serve and enjoy!
