Preheat an oven to 425 degrees. Lightly brush both sides of the sweet potato slices with oil and place on a baking sheet. Bake for 20-30 minutes, until the edges are slightly crispy. Alternatively, you can toast them in a toaster oven for 15-20 minutes.
Place the sausage ingredients into a mixing bowl and mix well until thoroughly combined. Heat coconut oil in a skillet over medium-high heat. Form the sausage into 2-inch patties and cook for 5 minutes on each side, until the pork is lightly browned and fully cooked. (I had a couple extra patties)
Lower the heat. Whisk the eggs and add to the pan and sprinkle lightly with salt and pepper. Use a spatula to scramble the eggs until they are cooked through. Remove from heat.
Place a sausage patty on a sweet potato slice, then add an ice-cream scoop of egg, and top with another sweet potato slice. Eat and enjoy!
