This Antioxidant Chicken Salad with Sweet Strawberry Dressing is a healthy, delectable salad that can easily be prepared in a jar for easy meal-prep!
Cook the chicken. Heat oil in a skillet over medium high heat. Sprinkle both sides of chicken with salt and pepper. Cook chicken in the skillet for 5-7 minutes on each side, or until it is cooked through and there is no pink. Remove from pan and slice.
Divide the greens on two plates, and top each with the chicken, blueberries, almonds, green onions, and desired amount of dressing.
Start by placing 1-4 Tbsp of the dressing in the bottom of the jars.
Place the cooked chicken in next.
Layer in the blueberries.
Add the almonds to the jars.
Layer the green onions in the jars next.
Add the greens to the jars. Pack as little or as much as you want in the jars, then seal them up and refrigerate.
When you are ready to eat the salad, unscrew the jar, hold upside down over a plate or a bowl, and use a fork to help empty all of the salad ingredients onto your dish. Your lettuce should be nice and crispy. Eat and enjoy!
