These paleo Apple Spice Cookies are the perfect gluten-free treat for the fall season, with a good old-fashioned apple pie taste!
Preheat an oven to 350 degrees F.
In a bowl, add the softened butter, maple syrup, egg, and vanilla and mix well.
In a large bowl, add the flour, cinnamon, nutmeg, baking soda, baking powder, and salt and mix.
Pour the wet ingredients into the dry and mix until everything is combined.
Stir in the chopped apple.
Line a baking sheet with parchment paper. Drop the batter by rounded teaspoons onto the baking sheet.
Bake for 10-12 minutes, until they are lightly golden-brown.
Place onto a cooling rack and let cool for at least 5 minutes. Enjoy!
