I thought I had posted my last recipe of the year, but while I was home yesterday I had a craving for some crackers. I decided to try a hand at making my own gluten free butter crackers with just a few ingredients I had leftover in my kitchen.
The result was great! These are gluten free, yet they taste like regular crackers. And they were super easy with just a few ingredients! If you’re like me and normally keep almond flour, eggs, butter and spices in your paleo kitchen, then this is a recipe that could be made without having to go to the store for a bunch of ingredients. Luckily, the HEB’s in my area have a bulk section where you can buy almond meal for cheaper than the already-packaged meal. If you have a bulk section I would check it out, it will save money! I usually go that route, and will put the almond meal through a food processor to make it more of an almond flour. Any way I can save money!
These tasted similar to the good old-fashioned club crackers, with a little bit of zest. I plan on making more. And these taste great with a bit of goat cheese, if you are not sensitive to dairy!

- 2 cups almond flour
- 1 egg
- 2 Tbsp grass-fed butter
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp dill
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes

Preheat an oven to 350 degrees.

Place the ingredients into a food processor and blend until it is a crumbly mixture.

Place the dough onto a sheet of parchment paper, and place another sheet of parchment paper over the top.

Roll the dough until it is about 1/8 inch thick.

Using a knife or a pizza cutter, cut the dough into desired shape (I made 1 1/2 inch squares).

Place onto a baking sheet. Bake for 12-14 minutes, or until they are just lightly browned.

Remove from oven, and break apart with hands.

Serve and enjoy!
