Who else loves sweet potatoes? Well, these sweet potato wedges/quarters are super tasty! I love all of the different ways to use maple, pecans, and sweet potatoes in the fall. So why not combine them all together? It just seems like the natural thing to do!
These are fairly simple to make, and they make for the perfect side dish for a cozy, autumn (or winter) meal. The flavors of caramelized maple, pecans, and sweet potato blend together nicely in this dish to make for a sweet and salty side-treat that will please everyone at the table!
- 2 lbs medium sweet potatoes
- 2 Tbsp grass-fed butter melted
- 1/4 cup maple syrup
- 1/4 cup chopped pecans
- salt & pepper
-
Preheat an oven to 450 degrees Fahrenheit. Line a baking sheet with aluminum foil
-
Cut your sweet potatoes into quarters in wedges and arrange on the baking sheet. Drizzle the melted butter over the sweet potatoes and sprinkle slat and pepper over them. Toss lightly to coat the potatoes evenly.
-
Roast the potatoes in the oven for 20 minutes.
-
Remove the sweet potatoes from the oven. Drizzle with maple syrup, and sprinkle with pecan pieces. Return to the oven and roast for an additional 10-15 minutes, until they are lightly browned and tender.
-
Remove from oven. Serve an enjoy!
